Gluten Free Fried Artichoke Hearts

So I hosted a dinner party last night and I wanted to try a new appetizer. I’ve made Fried Artichoke Hearts before but its been about 6 years, and they were definitely not Gluten Free.

Ingredients

Canola or Vegetable Oil for Frying

3-4 Tablespoons Gluten Free All Purpose Flour

3-4 Teaspoons Italian Herb Seasoning (rosemary, thyme, oregano, basil)

Salt and Pepper

2 eggs

Green Tabasco

2 (12 oz) cans of Whole Artichoke Hearts Drained (you can use fresh artichoke hearts if you know how to clean them)

 

Put the oil in a pan about 2-3 inches from bottom. Let it come to about 375 degrees or until you drop a splash of water in and it sizzles. Make sure the Artichoke hearts are fully drained. Cut them in half. Mix the flour with the Italian Seasoning and Salt and Pepper.  In a separate bowl mix the two eggs with a teaspoon or so of green Tabasco. Then when the oil is ready dredge the hearts in the flour, then the egg and back into the flour and drop into the oil. Flip after a few seconds (they only take about 20-30 seconds to fry if the oil is at the right temp).

I served them with a Pesto Mayo which was just 1 1/2 Tablespoons of Pesto Paste and enough mayo to make it creamy. In the past I used to serve with a citrus aioli as well. Better hot out of the oil but easier to eat after they have cooled down a bit.
