My First Soup – 1/25/13


So last night I made my first homemade soup and wanted to share with you all because it turned out great and is super healthy.

6 on the vine tomatoes cored and seeded and cut in quarters
1/2 pint of cherry tomatoes whole
1 cup bell peppers (I used a combo of red, yellow and orange)
3 cloves of garlic
6 larger basil leafs torn into pieces
1 cup sautéed diced sweet onion
2 small handfuls of baby kale
2 small handfuls of baby spinach
2 tsp dried thyme
2 tsp dried oregano
2 tsp dried basil
1/2 cup water
black pepper to taste
balsamic vinegar

Combine all veggies in sauce pan and cover with water. Cook until all veggies are soft. Add half the dry spices and mix well. Put in a blender or use an immersion blender until veggies liquefy. Then back on the stove to simmer. While simmering add the remaining spices and balsamic. Let simmer for a few minutes and then soup is done. Garnish with your choice of ground meat or grated mozzarella or finishing oil if you desire. Recipe makes 4-6 servings.
